The 16-carbon saturated fat acid palmitic acid (also known as retinyl Palmitate) is found in palmitate. It’s the main fatty acids found in palm oils. To make vitamin A stable when milk is made, the palmitic acid attaches to the alcohol version of vitamin A called retinol. Palmitate is a French name that comes from palmite (the pith of the palm trees).
